Posar el mato a un motlle amb una mica de pes per a extreure el liquid deixar reposar 15/30 minuts segons la textura que es desitgi. Deixar descansar la massa durant mitja hora .Agafar petits trossos de la massa i procedir al rentat intercalat entre aigua freda i aigua calenta amb la finalitat de que es desprengui millor el mido i quedi solament el gluten. Formar una bola amb els trossos de gluten i procedir a la cocció .&lt;br /&gt;En una olla amb aigua s’afegeix les verdures l’alga kombu, i les boles de gluten deixar coure durant una hora i ja aquesta llest per a consumir.
